Sometimes at the end of a busy work day, the last thing we want to do is to cook a meal for our whole entire family!  I think that so often this is where we resort to quick take away options, but yet all we really want to do as a Mum or Dad is to provide our kids with balanced nutritious meals!

Recently, we took you guys on a scavenger hunt through the grocery store, to find some truly awesome Health Star Rated products!  The Health Star Rating is fabulous, because it allows you to very quickly and easily compare similar products!  So within a blink of an eye you can select the healthier option and keep shopping!! (You will be surprised to find out how products such as yogurt can vary in their health star rating!  And here we thought yogurt was just … yogurt!)

So today, after choosing some great products that had around 4-5 Health Start Ratings on them, we decided to show you guys how easy it is to throw them together in order to make a yummy Chicken Satay dinner, followed by a healthy Frozen Berry Yogurt ‘Ice Cream’!

 

Quick and Easy Dinner Recipes for Family

5 Minute Berry Frozen Yogurt ‘Ice Cream’:

This dessert is a really yummy but healthy one!  And it happens to be super quick and easy to make as well!

You will need a blender or food processor!  You can whip it up in around 5 minutes, but it really requires around 3 hours to set, so make sure you get on to this dessert earlier in the day!

Ingredients:

  • 4 Cups of Frozen Berries (4.5 Health Rating Stars)
  • 1 Cup of Vanilla No-Fat Yogurt (5 Health Rating Stars)
  • 4 tbsp of Honey
  • 1 tsp Vanilla Essence
  • Fresh Mint
  • Grated Dark Chocolate as Topping

We had a lovely time in the kitchen as a family whilst making this dessert!  It is so easy to make that you could easily get the kids to do it themselves!  I gave my kids one blending container each so that they could make their own ‘ice cream’.  I love teaching them how to make yummy things in a healthier manner!

 

Instructions:

1.  Measure out your berries and yogurt in a measuring jug.

2.  In your food processor or blender, add frozen berries, yogurt, honey and vanilla.

3.  Blend for 2 minutes or until the mixture is creamy.

4.  Simply pour the mixture into a narrow deep container and pop in the freezer for a minimum of 3 hours to set.

Serving Tips:

The Frozen Berry Yogurt will be hard to scoop straight away, so leave it out for a few minute to soften up.  Simply scoop using an ice cream scoop.  Grate some chocolate over the top and add in a few leaves of mint for freshness!  TA-DA!!!!  How super easy was that!!!

The Kids Verdict:

The girls reckon that this is a super yummy dessert and they polished it off within no time at all!  They are keen to explore other types of frozen fruit such as mango, as they weren’t 100% keen on the little berry seeds in the dessert!

Variations:

  • Try combining different flavours of yogurt with different types of frozen or fresh fruit!
  • Use a squeeze of fresh lemon instead of honey for a fresh flavour.

Healthy Satay Chicken Dinner:

So while you have your delicious Frozen Berry Yogurt setting in the freezer, you can get on to making dinner!  As a family of 5, we like to keep dinners to a few ingredients so we can whip up the meal in no time at all!

Ingredients:

  • Packet of Chicken Satay Skewers Recipe Mix (4.5 Health Rating Stars) which requires Natural Crunchy Peanut Butter (5 Health Rating Stars), Coconut Milk (3 Stars), Sweet Soy Sauce, Oil
  • Chicken – Cut into strips
  • Skewers
  • Brown Rice (4 Stars)
  • Frozen Mixed Vegetables (5 Health Rating Stars)
  • Coriander

Satay Chicken

Instructions:

  1. Slice your chicken into thin slices and thread onto a skewer.
  2. Make up your basting and satay sauce according to the packet instructions.
  3. Fry off your satay chicken on a grill.
  4. Either cook some brown rice over the stove or take a short cut by popping some microwave rice into the microwave.
  5. Heat up your frozen vegetables, give them a quick stir fry for extra flavour.
  6. Serve up with a sprinkle of coriander and enjoy!!

The Kids Verdict:

Which kid doesn’t like meat on a skewer!!  Whilst my little Lily did not enjoy the satay sauce, she still managed to finish off her plate of food!  Katie loved the meal!

The Health Star Rating is a front-of-pack labeling system that rates the overall nutritional profile of packaged food and assigns it a rating from ½ a star to 5 stars.   We love it, because it provides a quick, easy, standard way to compare similar packaged foods.  It is pretty simple, the more stars, the healthier the choice.  How exciting is it to not have to try and decipher those confusing nutritional labels anymore!!!
